Lynn Carman Bodden
Whether you’ve got a bounty of strawberries, rhubarb, blackberries, or peaches, Lynn Carman Bodden has a sweet treat for you. Get your rhubarb at the Schenectady Greenmarket if you haven’t already - you can always chop it up and freeze it until you’re ready to add your favorite berries.
Instructions
1. Preheat oven to 350F.
2. Prepare filling in baking dish/bowl
In a large glass or ceramic casserole bowl:
4 cups of fresh fruit - berries in any combination you love work well, or berries and peaches or rhubarb
Brown sugar to sweeten to taste
I sometimes sprinkle with a little flour and water to thicken the juices as this filling cooks.
3. Prepare Topping
Combine:
1/4 cup butter cubed
1/2 cup granola (I use homemade, which is heavy on the nuts and low on sugar)
1/2 cup brown sugar
Pulse in food processor to mix.
Sprinkle evenly on the top of the fruit.
4. Bake 30 minutes.
5. Enjoy with ice cream or whipped cream on top. Yum!
